Our top back to school morning struggle is having enough time for breakfast. We've added dressing herself to Violet morning routine. That can slow down our super tight schedule. I've started making her breakfast that she can have in the car just in case we're run behind or just want to jazz it up.
Cereal muffins are a great option. They're filling and taste great. Malt-O-Meal® offers 34 delicious flavors so there's one that can suit all taste buds. It's also easy on the budget. V is a big fan of Malt-O-Meal® Cinnamon Toasters so here's how we eat it on the go.
I make a fresh batch over the weekend so they're ready to go on those rushed AM back to school days.
Muffin Batter
⅔ cup sugar
2 eggs
¾ cup butter
3 ripe bananas
1¾ cups flour
1 cup cinnnamon toasters, crushed
1¼ teastpon baking powder
½ teaspoon baking soda
¾ teaspoon salt
Crunchy Topping
2 tablespoons unsalted butter, melted
2 tablespoons all-purpose flour
1 cup Malt-O-Meal® Cinnamon Toasters cereal, crushed
¼ cup light brown sugar
1. Preheat oven to 350° F.
2. Melt butter until melted and then stir in 1 cup of crushed cereal, brown sugar and flour until it becomes crumbly. Set aside.
3. Mix sugar, butter, and eggs until creamy.
4. Combine flour, baking soda, baking powder, and salt; then add to wet ingredients.
5. Add bananas and beat until blended.
6. Stir in Malt-O-Meal® Cinnamon Toasters cereal.
7. Pour batter into greased muffin tins or paper cups.
8. Sprinkle crunchy cereal toppings on top.
9. Bake for 25 to 30 minutes.
